Comfort Food Rules!

Here is my recipe for Chicken Stew with Dumplings adapted from my mom’s recipe. Thanks Mom!

1 whole chicken

2 large potatoes

4 carrots

2 stalks of celery

1 small onion

2 Tbs Worcestershire sauce

Dash of cayenne pepper

1/4 tsp garlic powder

1 tsp season salt

1 box Jiffy biscuit mix

salt and pepper to taste

Place whole rinsed chicken in 3-4 quart pot, add peeled 1/2 inch dice veggies, seasonings and water to cover. Bring to boil, then reduce to medium-low heat for 1 hour. Remove from heat. Remove chicken from pot allow to cool, then de-bone and shred chicken discarding bones, skin etc. Return chicken to pot, bring to boil, then reduce to medium-low heat for an additional hour. Just prior to serving prepare biscuit mix according to package directions. Bring stew back to boil then drop tablespoons of prepared biscuit mix on top of the stew. Allow to boil uncovered for 5 minutes, then reduce heat to medium-low, cover pot and allow to cook for 5 more minutes. Serve and enjoy!
